Vert smooth. The ingredients disappear and make way for something new and delicious. It's sweet and balanced. I skipped the egg white because I didn't have any, and went with fee foam and 0.75oz water instead. As this is on the rocks, I doubt it would have made much of a difference. Maybe I'll try it with egg white some time later. The essence cinnamon syrup is the only thing that manages to break through and be it's own flavor. I'm starting to think that it's too clear cut to be used in most cocktails, unless you really want to taste the individual ingredients.
